Potato Pancakes

This is a very good side dish. They went fast here!!

1 lb. baking potatoes , about two medium 2 T. all-purpose flour
1/2 small chopped onion 3/4 t. salt
3 egg whites 1/4 t. pepper
oil, for skillet

Peel potatoes; cut into chunks. Combine potatoes, onion, egg whites, flour, salt and pepper in food processor or blender ; (I used a blender, and it worked well) process until almost smooth. (mixture will appear grainy)

Heat large nonstick skillet 1 minute over medium heat. Add oil to the skillet. Spoon about 1 1/2 tablespoons batter per patty into skillet. Cook the patties 3 minutes per side, or until golden brown. Repeat with remaining batter, adding oil with each batch.

I made 20 patties out of this recipe. It all depends on how much batter you spoon out per patty.
