Bread (For in a Bread Machine)

After flopping a few batches of bread in the bread machine, I found this recipe which works REALLY well...

12 oz. liquid (Potato water, water, ect.)
2 TBS. butter/margarine
4 C. flour
2 TBS. sweeting (Honey, sugar, ect.)
2 tsp. salt
3 tsp. yeast

Put all the ingredients in the bread machine 'bowl' in this order: liquid, butter/margarine, flour, sweeting, salt, yeast. The loaf size setting should be 1 1/2.
For sweeter bread, add 1/2 C. sugar.
Works well for dough, too..
Can be used for things like cinnamon rolls ;)

Chewy Brownie Cookies

These are probably my favorite cookies after chocolate chip cookies.

Chewy Brownie Cookies

1 1/2 c. firmly packed light brown sugar
2/3 c. vegetable shortening
1 T. water
1 t. vanilla extract
2 eggs
1 1/2 c. all-purpose flour
1/3 c. unsweetened cocoa powder
1/2 t. salt
1/4 t. baking soda
2 c. (one bag) semisweet choc. chips

1. Heat oven to 375 degrees.

2.Place brown sugar, shortening, water, and vanilla in a large bowl. Beat at medium speed of electric mixer until well blended. Add eggs; beat well.

3. In a small bowl combine flour, cocoa, salt, and baking soda. Add to shortening mixture; beat at low speed just until blended. Stir in choc. chips.

4. Drop dough by rounded tablespoons 2 inches apart onto ungreased baking sheet.

5. Bake one baking sheet at a time at 375 for 7-9 minutes or until cookies are set. Do Not Overbake. (cookies will still look and feel squishy but I promise they will harden!) Cool 2 minutes on baking sheet. Remove cookies to cookie rack or foil to cool.

Baked Oatmeal

This is really good for breakfast! It is much better than normal oatmeal.

Baked Oatmeal

6 cups quick oats (You can use regular oats, too)
2 cup milk
1 cup oil
1 1/2 cup brown sugar
4 eggs
3 teaspoons baking powder
2 teaspoon salt
2 teaspoon cinnamon

Mix everything together and pour into a greased 9 X 13 pan. Bake 20 minutes at 350*.

Hummus

Hummus is really nice for dinner on a hot day...

Hummus
Makes about 3 cups

2 cups cooked or canned garbanzo beans, drained
2/3 cups tahini (sesame paste)
3/4 cups lemon juice
2 cloves garlic, peeled
Sat and pepper to taste

Place the garbanzo beans, tahini, lemon juice, garlic, salt, and pepper in a food processor and blend until smooth. Pile into bowl and garnish with parsley leaves (optional). Serve with pita bread or corn chips

Peanut Butter Coffee Cake

This, I think, is the best coffee cake in the world!

Peanut Butter Coffee Cake

Topping
1 cup packed brown sugar
1 cup flour
1/2 cup peanut butter
6 TBS butter
1/2 cup chocolate chips

For topping, in a bowl stir together brown sugar, cup flour, cut in cup peanut butter and butter till crumbly, add chocolate chips. Set aside.

Batter
2 cups flour
1 cup brown sugar
2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1 cup milk
1/2 cup peanut butter
1/2 cup chocolate chips
2 eggs
1/4 cup butter

In a bowl, stir together flour, brown sugar, baking powder, baking soda, and salt. Add milk, peanut butter, eggs, and butter. Beat with an electric mixer on low speed till blended. Beat at high speed for 3 min. Add chocolate chips.

Pour batter into a greased 9x13 pan, sprinkle with topping. Bake in a 375* oven for 30 minutes.

No Bakes (Mountain Bars)

Hey! I suppose I will be the first to post a recipe :) Here is one of the best cookies.. I have like, 4 favorite cookies, though...

No Bakes (Mountain Bars)

2 cups sugar
1/2 cups milk
1/2 cups butter
1/2 cups cocoa powder
1/2 cups peanut butter
1 teaspoon vanilla
3 cups quick oats

Boil first four ingredients for one minute, then take off stove. Add peanut butter, then add vanilla and oats. Stir, then scoop onto cookie sheet(s). (Note: when you add the vanilla and oats, you can put some coconut in it, too.. about 1 cup)
