Blueberry Muffins

Blueberry Muffins
Yield: makes 32

4 eggs
2 c. milk
2 c. oil
2 t. salt
6 c. flour
2 c. sugar
8 t. baking powder
3 c. blueberries

Mix dry ingredients then add wet ingredients. Fill muffin papers about 3/4 way full. Bake at 400 degrees for 20-25 min. Enjoy!

Potato Rolls

Makes around 20 rolls, depending on size.

Ingredients:

4 to 5 c. all-purpose flour
1 pkg. active dry yeast (2 1/4 t.)
1 c. milk
1/4 c. water
1/4 c. sugar
1/4 c. shortening
1 1/2 t. salt
1 beaten egg
1/2 c. mashed potato*

* Peel and quarter one medium potato. Cook in a small amount of boiling salted water until tender; drain. Mash with a potato masher or beat with an electrical mixer. Measure out 1/2 cup ; set aside.

Combine two cups flour and the yeast. Heat and stir milk, water, shortening, sugar, and salt just until warm; add to flour mixture along with egg and mashed potato. Beat until combined. Stir in as much flour as you can .

Turn dough out onto a lightly floured surface. Knead in enough flour to make a moderatley stiff dought that is smooth and elastic. Shape dough into a ball. Place in a lightly greased bowl, turning once to grease surface. Cover; let rise in a warm place until double (about one hour).

Punch dough down. Turn dough out onto a lightly floured surface. Cover; let rest for ten minutes. Meanwhile, lightly grease a baking sheet. Roll dough into 2 1/2 " balls, and place on the baking sheet. Cover; let rise in a warm place until nearly doubled.

Bake in a 400* oven for 10 to 12 minutes or until golden brown. Remove rolls from baking sheet and butter if desired.

Easy Peach Cobbler

Easy Peach Cobbler


4 lb. peeled and sliced peaches

1 1/2 boxes dry yellow cake mix

1 1/2 sticks butter


To peel the peaches, boil water and place peaches in water for 1 minute. Take out with tongs and and let them cool until they are handleable. Then, the skin comes off easily. Slice. Take the peeled and sliced peaches and put them in a 9x13 pan. Pour dry yellow cake mix over top and dot with butter. Cook for 45 minutes on 350* or until golden.

Stuffed Peppers

Serves around 6, depending on serving size

Ingredients:

6-8 medium-sized green peppers
3 cups uncooked brown rice
4-6 cups of water
1/2 large onion
1 can diced tomatoes
1/2 cup cubed velveeta cheese (more or less to taste)
Colby and monterey jack cheese (optional)

1. Core green peppers, and place in a pan of boiling water. Let boil until peppers are easy to poke with a fork.

2. Meanwhile, cut up the onion, and place in a pan along with the brown rice, and 4-6 cups of water and let boil. (You will need to keep an eye on the rice, if it needs more water while it is boiling, add more) When the rice becomes tender, remove from heat and add the diced tomatoes and velveeta cheese, stirring until cheese is melted. Preheat oven to 375* F.

3. Once the peppers are done boiling, drain the water and place them in a baking dish. Spoon rice mixture into the holes of the green peppers. Spoon any remaining rice into the baking dish. Colby and monterey Jack cheese can be sprinkled over the rice and peppers.

4. Bake for 15-20 minutes, or until hot.

This is a relatively easy supper dish to make.

Great Grandma’s Country White Bread

Great Grandma’s Country White Bread
Makes 2-3 loaves

Ingredients:
1 TBS. sugar
1 TBS. yeast
2 c. warm water, divided
2 tsp. salt
3 TBS. margarine
7-8 c. flour, divided

What to Do:
In a mixing bowl, combine sugar, yeast and 1/4 c. warm water. Let stand 5-10 minutes.
In a small bowl, mix 1 c. flour, salt, margarine, and 3/4 c. warm water; add to the yeast and mix well.
Stir in the remaining 1 c. water with 4-5 c. of flour (stirring vigorously) or enough flour so that the dough forms into a ball.
Sponge rise until dough is doubled in size.
Turn onto a floured surface and knead 5-10 minutes, adding additional flour as needed.
Place in a bowl and let rise until double.
Punch down and shape into 2 or 3 loaves. Place in loaf pans. Let rise until double. Bake at 375* for 30-35 min. Enjoy!

Bethy's Breakfast Burritos

Bethy’s Breakfast Burritos
Makes 7 unless you fill your tortillas really full

2 strips of bacon cut into smallish pieces
8 eggs
a bunch of salsa
7 small tortillas
dallopes of sour cream (two for each burrito)

Fry the bacon. Add the eggs and scramble. When the eggs are done frying, put in salsa to taste. Fill your tortillas with the eggs, and put two dallopes of sour cream on each. Enjoy!

Potato Pancakes

This is a very good side dish. They went fast here!!

1 lb. baking potatoes , about two medium 2 T. all-purpose flour
1/2 small chopped onion 3/4 t. salt
3 egg whites 1/4 t. pepper
oil, for skillet

Peel potatoes; cut into chunks. Combine potatoes, onion, egg whites, flour, salt and pepper in food processor or blender ; (I used a blender, and it worked well) process until almost smooth. (mixture will appear grainy)

Heat large nonstick skillet 1 minute over medium heat. Add oil to the skillet. Spoon about 1 1/2 tablespoons batter per patty into skillet. Cook the patties 3 minutes per side, or until golden brown. Repeat with remaining batter, adding oil with each batch.

I made 20 patties out of this recipe. It all depends on how much batter you spoon out per patty.

Chocolate chip oatmeal muffins

This recipe is a favorite around here. Usually they do not last that long. :)

1 egg 3/4 c. milk 1/2 c. oil 1 c. flour 1/3 c. sugar
1 T. baking powder 1 t. cinnamon 1 c. rolled oats
1/2 c. chocolate chips

Preheat oven to 400*. Grease a muffin tin, or place baking cups into a muffin tin.

Stir all of the ingredients together in a large bowl. (I usually start with all of the wet ingredients, then add the dry ones) Spoon into muffin tin/cups. (you need to fill the tin/cups two-thirds full. Do NOT fill any further, as it is very hard to get them out when they are any fuller than that.)

Bake for fifteen minutes, or until muffins are golden brown. (I usually let the muffins cool for about 10-15 minutes before gettin them out of the pan. If you try any sooner, they fall apart.)

This recipes yields about 12 muffins. Do NOT double the recipe, the recipe ends up sour due to the excessive amount of baking soda. If you wish to bake 24 or more, just remake the batter for the desired amount of muffins.

Bread (For in a Bread Machine)

After flopping a few batches of bread in the bread machine, I found this recipe which works REALLY well...

12 oz. liquid (Potato water, water, ect.)
2 TBS. butter/margarine
4 C. flour
2 TBS. sweeting (Honey, sugar, ect.)
2 tsp. salt
3 tsp. yeast

Put all the ingredients in the bread machine 'bowl' in this order: liquid, butter/margarine, flour, sweeting, salt, yeast. The loaf size setting should be 1 1/2.
For sweeter bread, add 1/2 C. sugar.
Works well for dough, too..
Can be used for things like cinnamon rolls ;)

Chewy Brownie Cookies

These are probably my favorite cookies after chocolate chip cookies.

Chewy Brownie Cookies

1 1/2 c. firmly packed light brown sugar
2/3 c. vegetable shortening
1 T. water
1 t. vanilla extract
2 eggs
1 1/2 c. all-purpose flour
1/3 c. unsweetened cocoa powder
1/2 t. salt
1/4 t. baking soda
2 c. (one bag) semisweet choc. chips

1. Heat oven to 375 degrees.

2.Place brown sugar, shortening, water, and vanilla in a large bowl. Beat at medium speed of electric mixer until well blended. Add eggs; beat well.

3. In a small bowl combine flour, cocoa, salt, and baking soda. Add to shortening mixture; beat at low speed just until blended. Stir in choc. chips.

4. Drop dough by rounded tablespoons 2 inches apart onto ungreased baking sheet.

5. Bake one baking sheet at a time at 375 for 7-9 minutes or until cookies are set. Do Not Overbake. (cookies will still look and feel squishy but I promise they will harden!) Cool 2 minutes on baking sheet. Remove cookies to cookie rack or foil to cool.

Baked Oatmeal

This is really good for breakfast! It is much better than normal oatmeal.

Baked Oatmeal

6 cups quick oats (You can use regular oats, too)
2 cup milk
1 cup oil
1 1/2 cup brown sugar
4 eggs
3 teaspoons baking powder
2 teaspoon salt
2 teaspoon cinnamon

Mix everything together and pour into a greased 9 X 13 pan. Bake 20 minutes at 350*.

Hummus

Hummus is really nice for dinner on a hot day...

Hummus
Makes about 3 cups

2 cups cooked or canned garbanzo beans, drained
2/3 cups tahini (sesame paste)
3/4 cups lemon juice
2 cloves garlic, peeled
Sat and pepper to taste

Place the garbanzo beans, tahini, lemon juice, garlic, salt, and pepper in a food processor and blend until smooth. Pile into bowl and garnish with parsley leaves (optional). Serve with pita bread or corn chips

Peanut Butter Coffee Cake

This, I think, is the best coffee cake in the world!

Peanut Butter Coffee Cake

Topping
1 cup packed brown sugar
1 cup flour
1/2 cup peanut butter
6 TBS butter
1/2 cup chocolate chips

For topping, in a bowl stir together brown sugar, cup flour, cut in cup peanut butter and butter till crumbly, add chocolate chips. Set aside.

Batter
2 cups flour
1 cup brown sugar
2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1 cup milk
1/2 cup peanut butter
1/2 cup chocolate chips
2 eggs
1/4 cup butter

In a bowl, stir together flour, brown sugar, baking powder, baking soda, and salt. Add milk, peanut butter, eggs, and butter. Beat with an electric mixer on low speed till blended. Beat at high speed for 3 min. Add chocolate chips.

Pour batter into a greased 9x13 pan, sprinkle with topping. Bake in a 375* oven for 30 minutes.

No Bakes (Mountain Bars)

Hey! I suppose I will be the first to post a recipe :) Here is one of the best cookies.. I have like, 4 favorite cookies, though...

No Bakes (Mountain Bars)

2 cups sugar
1/2 cups milk
1/2 cups butter
1/2 cups cocoa powder
1/2 cups peanut butter
1 teaspoon vanilla
3 cups quick oats

Boil first four ingredients for one minute, then take off stove. Add peanut butter, then add vanilla and oats. Stir, then scoop onto cookie sheet(s). (Note: when you add the vanilla and oats, you can put some coconut in it, too.. about 1 cup)
